Vindaloo comes from Goa, on India's west coast, where Portuguese and Indian cooking traditions blended centuries ago. Its name comes from the Portuguese dish carne de vinha d'alhos, meat cooked with wine vinegar and garlic. Goan cooks transformed it by adding local chillies and warm spices, creating the bold, tangy curry known around the world today.

Our Vindaloo sauce is built on dried red chillies, garlic, ginger, vinegar and a blend of warm spices like cumin, cinnamon, cloves and black pepper. The sauce is cooked down until thick and rich, then your choice of protein is simmered in it along with tender chunks of potato. The potatoes soak up the sauce and add a hearty, comforting texture.
