Manchurian Gravy

Vegetable balls of cabbage, carrot and capsicum, deep-fried crisp and simmered in a glossy Indo-Chinese gravy of soy, ginger, garlic and green chili. Not Chinese and not quite Indian — a Kolkata invention that became its own cuisine. Savory, tangy and mildly hot, best eaten straight away while the balls still have some bite. Vegetarian.
