We marinate bone-in goat in yogurt, ginger, garlic and a blend of warm spices, then cook it slowly until the meat is juicy and tender, pulling easily from the bone. It's layered with long-grain basmati rice, caramelized onions, fresh mint, cilantro and whole spices like cardamom, cinnamon, cloves and bay leaf. The pot is sealed and slow-cooked dum style, so the rice steams in the rich, savory juices of the goat and spices. Cooking on the bone adds extra depth, giving every spoonful a bold, hearty flavor you won't find in boneless versions.

FAQ: What's the difference between goat biryani and lamb biryani? Goat meat is leaner with a richer, slightly earthy flavor and is traditionally cooked bone-in, while lamb is milder and more tender.
